My Experience Making a "Queen Mother Ube Cake" at IDIM DIY Bakery!

  

I finally tried IDIM (I Did It Myself) DIY Bakery!


Baking is not new to me. I am one of those who found love in cooking and baking during the lockdown period. It was also when I bought my oven and other baking tools. But I must admit that most of the time, I just use fool-proof cake mixes for my cakes, cupcakes, brownies, and other pastries. Also, most of my knowledge came from Youtube videos and recipes online. 


I've been hearing about existing DIY bakeries but never really thought the need for it. I mean, if you can bake at home, what difference would it make spending some bucks doing it outside?

Well I guess I would never know until I try it, right? Good thing Mommy Bloggers Philippines held a Mom's Day Out at IDIM (I Did It Myself) DIY Bakery as a Pre-Mother's Day Celebration!

IDIM DIY Bakery originated from Taiwan and is the first Do-It-Yourself bakery in Asia. In the Philippines, they already have two branches: [1] 4F Mega Atrium, SM Megamall -- which I visited; and [2] 4th Floor, Building A, Ayala Malls Manila Bay. 


  • Walk-ins are welcome but it is best to book a baking session through their site https://www.idimdiybakery.com/ or via Facebook Messenger
  • 6-inch (diameter) Decorative Cakes range from Php1,199 to Php1,499 in price. But there are other cake types as low as Php799. Doughnuts and other pastries are also available at a cheaper price
  • The price already covers the fee for the baking session, the ingredients needed for creating the desired cake/pastry, and the usage of equipment

The Experience

First thing to do is to choose a cake or pastry to make. There are various cake flavors and types -- decorative cake, chocolate cake, cheesecake, pie, cookie, doughnut, macaron, and more. You can also make your own milk tea. Fun! Since Mother's Day is coming, I chose one of their seasonal cakes -- the Queen Mother Ube Cake!
  

Some of the desserts to choose from

I was given a wristband which identifies if I'm a solo baker, working in pair, or a returnee. Maximum of 2 persons can work on a dessert. Children at least 6 years of age are allowed to bake as long as accompanied by an adult.

I was then handed a tablet which contains the cake of my choice. This became my bestfriend all through out the baking session as it contains the terms and conditions, list of tools & ingredients, and videos with step-by-step procedure. I was literally carrying it wherever I go!

One important thing to remember is to never take a photo, video, or in any way copy the recipe provided in the tablet. This is copyright protected by IDIM DIY Bakery. 


Queen Mother Ube Cake

For this Queen Mother Ube Cake, I had to work first on the batter, the meringue, mixing them together and baking them to form the base cake. While the cakes were baking, I had to work on both the filling and the frosting. And when all were done, final part is to assemble, frost, and decorate. The staff would then put it in a beautiful see-through box. Seems easy in theory but since I'm not a pro baker and a little bit on the OC side, several times I had to recheck the measurements and instructions which caused me some time.

In summary, these are the things that I like about my IDIM DIY Bakery experience: 

  • The instructions and the sequence provided in the tablet are clear and easy to follow. It allows you to focus on what to do first so you don't get overwhelmed. If the first part is making the batter, then all the materials needed, the exact measurements of ingredients plus where to find them are specified properly
  • There are video instructions along with step-by-step procedure. How to use the stand mixer? How do I know if my meringue, batter, or frosting is at the right consistency? They're all shown in the video on your tablet
  • The ingredients are readily available -- all you have to do is measure. Need egg white or egg yolk? No need to crack an egg and separate them. Just get from the ref and measure what you need
  • Complete and high quality tools and equipment. I get to appreciate baking more because the process became much efficient with the right tools. It was my first time using a stand mixer and I want one in my kitchen now! And I don't know what it is with their oven but my cake was baked perfectly!
  • There are well-trained staff to help you. Although the aim is to do things on your own, there can be some situations when a little help from the staff is needed. For my case, it was when I cannot get to smoothen the frosting on my cake. I asked a staff to help me and I even learned some tips!
  • You don't have to cleanup! Yes, I guess this is the best part! (haha!) There are times when I want to bake at home but the idea of cleaning up after is turning me off. Here, you can use as much bowls, spatula, silicone molds, etc needed for the recipe and not to worry about washing them or putting them in the right places

You can see how I really loved the experience but there are just two watchouts if you're going in as a big group: 
  • You can only bake for a maximum of 2hours. Two hours is supposedly sufficient to finish the whole process. But some factors could take up your time such as unfamiliarity, trying to make everything perfect, and when you encounter some boo-boos. Just be mindful of the time
  • There could be too many bakers at the same station. The tendency when you're in a big group is that you'll all start at the same time. Since it usually starts with preparing and measuring ingredients, that specific area can get crowded

Overall, this is really a fun experience to try with your family or friends! When I showed the videos and photos to my 9-year-old son, he instantly got excited. So yes, I'm going to bring him soon!
