Carnivale: Wangus, French Onion Croquettas, and more!

If you're up for some "crazy good food", Carnivale at S Maison, Conrad Manila is the place to go.

Relive childhood memories with its huge carousel-like ambiance. The place isn't so spacious but the carnival theme is consistent with its circus-themed murals, and colorful seats and decorations.

Even the menu is unique as it is in a form of card deck. As a customer, I find it easier to choose and compare food in this way. But for the servers, they should always keep an eye on their menu to ensure they'll always have a complete set.

Cotton candy was served as complimentary while waiting for the food. It sure tickled the kid-at-heart in me. They have a cotton candy maker as they incorporate cotton candy in some of their drinks and desserts. It is always fascinating to watch how it turns out to be this soft fluffy sweet stuff!

Now onto the "crazy good food"! It is here at Carnivale where Chef Mikel Francis Zaguirre (same chef as Locavore) unleashed his colorful and playful imagination. Not specific to any cuisine, but the peculiar combination of flavors, textures, and presentation are obvious. But more than the enticing appearance, Chef ensured the quality of food by doing their own food processing and preparations, and incorporating sophisticated techniques and styles using fresh high-grade ingredients.

French Onion Croquettas as a starter is a perfect depiction of how varied and fun things can go here. The inspiration is simple -- Onion Rings. But look how crazy it has gone from French onion soup turned into jam, colorful nacho chip bits formed into sphere, and oh, the lovely combination of spice and sharp cheese! Recommended.

For the not-so-adventurous, Truffle Fries would provide a more familiar yet still good sides option. Huge serving of thick-cut fries showered with truffle dressing and parmesan.

With all the hype with salted egg, Carnivale brings Salted Egg Fries worth enjoying whether you love salted egg or not. It is flavorful and good minus the sharp salted egg taste. The salted egg essence is more obvious in the texture rather than a full bang in its taste. 

Wangus (360Php)
Butter toasted Brioche Bun, Sous-Vide Angus Beef, streaked with Wagyu Fat, Two Hour Tomato Confit, Gratinated Yellow Cheddar, Onion Relish

Angus beef burger made even more special with Wagyu fats -- there's no more obvious way to call it but Wangus. If that does not justify the price, then know that all preparations and processing were done in the kitchen. From grinding the beef to ensure freshness, to deep cooking using the Sous-Vide machine for that consistent quality and sealed-in flavor. The result is a thick and really juicy patty with pure beefy goodness. The other sandwiched ingredients were just there to complement the meat, but the toasted buns gave a twist to the usual burger experience.

Gravlax (380Php)

To put it simply, Gravlax is salmon burger. Salmon is noticeably fresh while its combination with honey mustard is like wasabi in sushi. I find the color combination also appealing with its squid ink toasted bun and layers of orange, pink, and green.

Ferrero (380Php)
Gold dusted Giant Profiterole and Sugar Kracklin, Dark Chocolate and Kahlua Ganache, Toasted Almond Flakes, Nutella Ice Cream, Dark Chocolate KitKat Bits

The meal started with a colorful bang and ended with this glittery glorious treat -- Ferrero. A playful combination of dark chocolate KitKat bits, Nutella ice cream, toasted almond flakes, and dark chocolate Kahlua ganache -- all sandwiched by huge halved cream puffs. Some gold dusting for extra magic, this dessert truly deserves a thumbs up!


The eye-catching ambiance paired with creative sumptuous food carefully prepared through signature techniques made the visit to Carnivale a truly marvelous experience.
